Bigleaf Maple Dinner

Join us for a special evening dedicated to celebrating Oregon’s Bigleaf Maple trees and supporting continued sugaring at Camp Colton!

SCHEDULE:

  • 5:00PM Cocktail Hour (including snack pairings)

  • 6:00PM Dinner Begins!

  • 9:00PM Guests Depart/Overnight Guests Retire to Gazebo Campfire or Accommodations

This intimate fundraising event starts out with a tour of Camp Colton’s grounds, lead by co-owners and lead rewilders Shir and Laurence Grisanti, including a visit to the Sugar Shack and sap and syrup tastings by Oregon Maple Project’s Executive Director, Eliza Nelson.

We’ll then meander down to the thoughtfully-restored Gathering Hall for cocktail hour and the first of an artisanal five-course meal prepared by Chef Aron Warren.

Each course of this bespoke seasonal dinner will highlight the fruits and flavors of our quiet hero, the Bigleaf Maple - from the maple-bourbon cocktail to the main course of crispy maple-glazed duck confit. The meal will close with a decadent dessert course, featuring a rich maple panna cotta and delicate olive oil cake.

Guests will go home with full bellies, maple bonbons from Ranger Chocolates and their very own Bigleaf Maple sapling to plant and tend.

Come for all of part of the evening - you can even add on overnight stay and sleep beneath the quiet canopy in one of Camp Colton’s rustically-elegant accommodations.

Note: this is a grown-ups only event, so please leave the kids with a sitter (and bring them home the party favors!).

Sorry, while we are happy to disclose ingredient lists for each dish for those with food sensitivities, we are unable to accommodate special meal requests at this event.

Proceeds from this fundraising event support continued community sugaring at Camp Colton.

Chef/Farmer/World Traveler

Aron hails from the Rocky mountains of Wyoming and Montana.  He developed a deep love of nature and the outdoors there and followed his dream of learning more about food to the Pacific Northwest.  He can usually be found dreaming of bringing together his two passions of food and nature to create an environment that fosters community, connection and creativity.  Aron's food has a rustic flair with a focus on high quality, locally-sourced, seasonal ingredients.  He's excited to create a meal for you inspired by the Bigleaf Maple which grows in the forest he works in daily at Camp Colton.

Oregon Maple Project is an educational nonprofit that engages community members in local production of Bigleaf Maple syrup - because nature is admirable, trees accomplish astonishing things, and together we can tap in for a taste. 

Camp Colton is a place for finding connection, inspiration and respite. Situated on 85-acres of lush Pacific Northwest forest within the ancestral homeland of the Molalla and Kalapuya people, our site provides space for people of all backgrounds to gather and experience the complex ecosystem that is at the center of all we do.
